Bone Broth - recipe

Rich bone broth combines delicious taste with valuable nutrients that are good for the body and mind. Bone or meat broth not only pampers the palate, but also promotes probiotic intestinal flora, your health and supports healthy development. Stock offers valuable nutrients and provides children in particular an essential resource for their physical and mental development. This nutrient-rich broth can be used to make delicious and healthy soups or sauces and I also like to use it to cook rice. By adding bone broth instead of water when cooking rice, the rice is much more nutritious and the additional fat in the rice makes it easier to digest. Ingredients

  • 1 Tbsp butter
  • 1 carrot
  • 1 onion
  • 2-3 slices of veal foot
  • 1 slice of beef liver
  • 1 half pork heart
  • 4 marrow bones
  • 2 tbsp apple cider vinegar
  • 2-3 bay leaves
  • 2-3 cardamom
  • 1-2 peppercorns
  • 1 tsp salt
  • 3-4l water
  • some parsley (optional)
  • salt

Instructions

  • Chop the onion and the carrot in big pieces. Shortly sear all favored bones and offal together with the onion and carrot in the butter.
  • Place it in a large saucepan together with the vinegar, the spices and the salt. Fill with water and bring to the boil. Then turn down the stove so that it just simmers.
  • Skim the foam that forms on the surface.
  • Put the lid on the pot and simmer for 12-24 hours. Stir a few times in the meanwhile.
  • Finally strain the broth. Add some parsley if you wish and season with salt. Get the bone marrow out of the cooled bones, puree and stir into the broth.
  • Now the bone broth is finished. You can drink it pure or use it for making other meals. For example I like to cook rice with it instead of using water. Or I use it for making soups, stew or sauces.
