  • 3 cups (whole wheat) flour
  • 1 cup kefir
  • 1 cup water
  • 2 eggs
  • 1/2 tsp salt
  • 1/4 cup maple syrup
  • 2 tsps baking soda
  • 3 tblsp melted butter
  • 3 bananas
  • 1/4 cup raisins

Instructions

  • Mix the flour in a container with kefir and water, cover loosely and leave out at room temperature for 12-24h.
  • Whisk together the eggs, salt, maple syrup, and melted butter until the mixture is slightly fluffy.
  • Mix in the bananas and add the baking soda and the fermented flour.
  • Stir the raisins into the batter.
  • Pour the batter into the muffin tins and bake at 325 degrees Fahrenheit (165 degrees Celcius) for about 1 hour or until a toothpick can be removed cleanly from the muffins.
