Braised Meat - recipe

Ingredients

  • 2-3 liters bonebroth
  • butter or ghee
  • 2 onions
  • Fatty meat (e.g. pork ribs, belly of pork)
  • Vegetables (e.g. carrots, kohlrabi,...)
  • 1 tsp paprika powder
  • salt
  • side dish (e.g. potatoes)

Instructions

  • Give the bonebroth in a large pot.
  • Cut the onions and fry them in a pan with butter or ghee. Then add them to the bonebroth.
  • Fry the meat in the pan shortly and hot from all sides. Add the fried meat, the paprika powder and a little salt to the broth.
  • Let it simmer for an hour.
  • Then add the vegetables depending on their cooking time. => hard vegetables ~20 min. / soft vegetables ~5-10 min
  • Skim everything off and serve with a side dish of your choice.
  • Season the broth with salt. Use part of the broth as a sauce. If you wish you can thicken it with a roux, gelatine or whatever else you prefer.
